
Sweet potatoes. Yum. I love them for their rich, satisfying flavor, their spunky color, and their ability to get along well with both sugar and salt. And you can’t go wrong when such a tasty vegetable has so many health benefits. So when I stumbled upon the No More Mallows blogger recipe contest, sponsored by the North Carolina SweetPotato Commission, I decided to share a couple of my favorite recipes. Of course we all love the special occasion sugared, nut-topped sweet potato concoctions (check out my hazelnut praline sweet potato recipe). But my favorite everyday methods for preparing sweet potatoes are savory.
We often enjoy them sliced thick and steamed, peeled while steamy hot, then mashed roughly with a pat of butter and some salt (great as a side with smoky pork chops). And, you should definitely try them baked, cooled, sliced thin with skins intact, and sautéed to a crispy golden brown (reminiscent of sweet potato fries and definitely addictive). The options are endless, and I’m sure I’m putting my sweet potato recipes up against some very tough competition.
