This recipe began as an experiment following a holiday baked ham and sweet potato dinner. Hungry for lunch, and rummaging around in the fridge the next day, I found a significant amount of leftover food (because I always have to be sure there’s enough for everyone to have seconds and still be able to have takeaway containers). Anyway, ham and sweet potatoes go together like peanut butter and jelly; and ham and Swiss cheese go together like, well, ham and cheese. So why not try them all together? It turns out that salty ham, flavorful sweet potato, and gooey cheese may be the next BLT!
2 pieces thick-sliced bread (like Texas toast)
1 thick slice ham (about 3.5 ounces), or veggie Canadian bacon
1 slice roasted sweet potato*, about ¼ inch thick (about 3 ounces)
Salt and pepper, to taste
1 slice Swiss cheese (about 1.5 to 2 ounces)
2 tablespoons butter
Preparation
Place one slice of bread on work area, and cover with a thick layer of ham. Place sweet potato slice on top of ham; sprinkle with salt and pepper. Top sweet potato with Swiss cheese, and cover with remaining slice of bread. Put one tablespoon of butter on top of bread.
Melt remaining butter over medium to medium low heat in heavy saucepan with cover. Place sandwich in pan, and grill slowly, flipping once. Cook until cheese is melted and bread is golden brown, about 8 to 10 minutes. Serve immediately.
Makes 1 sandwich.
* To roast sweet potato, wash and bake in a 400° oven for about 40 to 50 minutes, or until cooked through and tender when pierced with a fork.
